
Beta-glucanase breaks down beta-glucans (polysaccharides found in barley and other grains) reducing wort viscosity during mashing.
This helps improve mash filtration/separation, preventing stuck mashes and improves lautering efficiency. By breaking down cell wall components, beta-glucanase also aids in extracting fermentable sugars and improving beer and spirit clarity.
