BuzzBoom is an innovative enzyme based processing aid designed for the production of no and low alcohol beers. It contains glucose oxidase and is added during the mashing stage to improve flavour balance, enhance freshness and reduce oxidative stress during wort production.
BuzzBoom works by actively modifying the early brewing environment before fermentation begins. The glucose oxidase enzyme catalyses the conversion of glucose into gluconic acid while consuming oxygen present in the mash. This controlled reaction helps optimise wort quality and supports the production of a cleaner, more rounded base beer.
By removing oxygen at an early stage, BuzzBoom reduces wort oxidation and improves flavour stability in the finished beer. The formation of gluconic acid results in a slight reduction in pH, while glucose modification improves the balance between sweetness and acidity in no and low alcohol beer bases. Together, these effects contribute to better mouthfeel and overall drinkability.
BuzzBoom allows brewers to improve flavour quality in no and low alcohol beers without the need for costly dealcoholisation equipment or additional capital investment. It also provides a superior base for flavour innovation using hops, natural flavours or fruit additions.
Key benefits
- Enhanced sweet sour balance in no and low alcohol beers
- Improved flavour stability and freshness
- Reduced oxidative stress during wort production
- Better mouthfeel and overall drinkability
- No requirement for capital investment in dealcoholisation systems
- Supports flavour innovation in finished beer
Application and use
BuzzBoom should be added at the onset of mashing to ensure optimal enzyme activity. It can be dosed directly into the mash as a powder or as a pre dissolved liquid solution. For easier dispersion, pre dissolving at a ratio of 1 kg in 4 L of ambient brewing liquor is recommended. Good mixing into the mash bed is essential.
Recommended dosage
1.0 to 2.0 kg per metric tonne of raw materials
