Selected from the Lallemand yeast culture library, LalBrew® London is a true English ale strain characterized by its reliable fermentation performance and moderate ester production, which allow the flavors and aromas of malt and hops shine through, characteristics that are essential in crafting traditional British ales.
Typical Styles
Authentic heritage UK styles including Extra Special Bitter, Pale Ale, Bitter and Mild. LalBrew® London may also be used in the production of Ciders.
Note: On average Maltotriose comprises 10-15% of all-malt worts. Fermentation with LalBrew® London will result in a fuller body and some residual sweetness in the finished beer. Brewers may wish to adjust gravities and mash temperatures accordingly.
